Named after my cousin, Chechare is bright, spicy and wonderfully sour. We marinate four different green chiles in our House-Cilantro & Bay Leaf Vinegar for over a year - to increase their potency. There's actually a Mother Load (think 100 year old Mole or 25 year old sourdough starter) of this sauce from back when we opened our Brooklyn Restaurant back in 2010!

The sour and spices will get to you, just like my cousin got to me. Add to ceviches for that wow impact, or your favorite seafood and chicken. The brightness of this Hot Sauce also counters High Fat foods - think eggs, avocado, pork - spectacularly. So Potent.
