Named after my cousin, Chechare is bright, spicy, and wonderfully sour — and just like my cousin, the sour and spice will get to you.

If you love pickles, this sauce is for you. Chechare is made in the tradition of escabeche — the Mexican art of pickling — where chiles are slow-marinated in seasoned vinegar until they develop a deep, complex tang. It's that same bright, briny, addictive quality you love in a great pickle, but with heat, herbaceous depth, and the complexity of four different green chiles.

We marinate four different green chiles in our House Cilantro & Bay Leaf Vinegar for over a year — to increase their potency and depth. The best!

This is the best green hot sauce. It has flavore as well as spice and literally goes on any and everything. I first found this sauce at the firey foods show in New mexico last year and am obsessed. So glad I could order more when I ran out.
